Custom Blending Fiesta Seasoning Green Chili

Fall is in the air.  The leaves are turning, there's plenty of football on TV, and it's time to get the chili pots out and enjoy some great food.  Thank you Abby Chadwick for creating this amazing Green Chili recipe using Custom Blending’s Fiesta Seasoning.  It’s delicious, warm, and made in a slow cooker for convenience - what more could you want?

Check out this delicious recipe:

1-2 tbsp of Custom Blending Fiesta Seasoning
1 lb pork tenderloin
32 oz box beef broth
1/2 yellow onion sliced
14.5 oz can diced tomatoes
2-4.5 oz cans green chilies
1/2 t. Garlic powder or 1 clove garlic minced
2 T. (Or more) flour


  1. Place pork and seasoning in a small crock pot. Fill pot with water to just cover pork.
  2. Cook on high for 4 hours.
  3. Put the onion, broth, garlic, and chilies in a large pot and bring to a boil. Turn off heat.
  4. Scoop out two cups of liquid from the pot and put into a bowl.
  5. Add flour and whisk together until combined.
  6. Place flour mix in the Chile and stir. Bring back to boil until thickened.
  7. Cut pork into 1 inch cubes. Add to chili.
  8. Serve with tortilla chips, tortillas, cheese , or sour cream.

Uncle Bemis Sausage, Jerky, and Game Seasonings

Big game season is in full swing in Colorado.  The mountains finally have seen colder weather and snow which is helping the elk and deer hunters. Word has it that the season is going well across the nation as well, which means the freezer will be full for the winter.  So, whether you are processing the game yourself or having a processor do it, Uncle Bemis® Sausage Seasonings are the seasonings of choice for both the home enthusiast and the commercial processor.

We received pictures from Billy in Mississippi showcasing the boar he bagged a few weeks ago.   Wow - that’s a nice boar! A home processor, Billy dressed the board, saving back straps, some roasts, etc., then ground up the balance and made sausage using Uncle Bemis® Maple Sausage Seasoning.  He was raving about how great his sausage turned out using the seasoning from the Uncle Bemis® line up. He said they grilled the sausage and have been eating it for snacks, with eggs, with pancakes, and for lunch, but mostly snacking on it throughout the day.  He said it was so good he couldn’t stop eating it!!

Great job, Billy!  Thanks for sharing the pictures - but sharing some sausage would have been nice too! ; )

A Wassailing we will go!

Wassailing?  How does one “wassail?”  In areas west of Europe, wassailing refers to drinking and singing to the health of trees to help them thrive.  The house-visiting wassail is the practice of people going door-to-door, singing and offering a drink from the wassail bowl in exchange for gifts; this practice still exists, but has largely been displaced by caroling.

We have the pleasure of working with Sam and Di at Rocky Mountain Wassail.  They have a great wassail that you can find at Ouray Glassworks or locations across the country.  For the kids (and young at heart), wassail is a mulled cider that can be enjoyed at any time.  A warm mug of cider as you watch the leaves or snowfall will warm your toes and your heart.  Add a couple teaspoons to a cup of green or black tea made with steamed milk.  Adults will enjoy adding a few teaspoons to a hearty red wine and heating through.

While at Sweetheart Winery in Loveland, we ran into Yvonne and Nicole who were looking to purchase some Rocky Mountain Wassail and were kind enough to let us get a picture.  They love the wassail!

A tavola non si invecchia

A tavola non si invecchia. - At the table with good friends and family you do not become old.

A tavola non si invecchia.  We spent lunchtime Thursday with our friends at Grandma’s Frozen Noodles, combining their incredible spaghetti and egg noodles with Custom Blending’s Alfredo and Marinara sauces.  What great possibilities for a school, caterer, daycare center, retirement community, hospital, truck stop or restaurant.  Add a package of Grandma’s Noodles to boiling water.  Mix Custom Blending’s dry Alfredo packet with water or our dry Marinara packet with tomato sauce and heat – a great meal in 30 minutes or less (and enough to feed a crowd).   We taste tested pastas with sauces, ate family style, and discovered all combinations were more than delicious!

Thanks to Moni and John for their great hospitality.  We enjoyed creating with them and look forward to developing new recipes with Grandma’s Frozen Noodles soon!

Grills Up, America!

Hey, it’s Tom.  After a three week spring season here in Colorado, summer has roared in with blazing heat.  Across the country, people are pulling out the charcoal grills, gas grills, smokers, and camp stoves. One thing I love about the diehard grillers and smokers is they will brush six inches of snow off their smoker at 3:00 a.m. to get a pork butt on for lunch, and grilling in the summer almost seems too easy (except for battling the mosquitos).

A great part of my job is working with people to get their rubs and seasonings to market.  Whether we’re helping Colorado Smokin’ Butts get their delicious rubs to the retail market or working with a local chain to standardize their product across all locations, it’s a delicious job to have!  Recently, we worked with our friends Mitch & Chris Hoyt from Skinny Sticks Pure Maple Syrup on a maple sugar rub.  Oh my!  The incredible aromas and flavors we created!

Our R&D team reaches beyond the walls of our facility.  Our friend Ryan Schleisman (Elevation Medical in Fort Collins) is always willing to do a pork butt on the Big Green Egg with one of these blends and report back.  What a team player!  I wonder if he would do a pizza on the Egg if we brought some Custom Blending Pizza Sauce seasoning and Uncle Bemis Hot Italian Sausage over...

If you’re so inclined, pick up some of our Uncle Bemis Bratwurst seasoning at Scheels in Johnstown, CO and grind your own brats.  You don’t have to put them in casings – just patty out the ground brat and grill it like a burger.  Serve on a pretzel bun with a spicy mustard. Yummy.

AutoZone has a slogan, “Hood’s Up America.”  I say, “Grills Up America!”  Food always brings people together.  Pull your grill, smoker, camp stove, or fire pit, to the driveway, get out the cornhole game, turn up some summertime tunes, invite the neighbors, cook some great food, and enjoy life.
